As a starter or for a light meal, indulge yourself with this delicious quinoa salad with fruit and cheese.

Ingredients for 4 persons :

  • 200 g of a mixture of red and white quinoa
  • 2 small pears
  • 3 figs
  • 10 pink radishes
  • 1 Black radish
  • 1 sucrine
  • 1 cow's cheese (Salers type)
  • 2 tbsp. tablespoon cider vinegar
  • 3 tbsp. tablespoon of argan oil
  • 1 tsp. hazelnut oil
  • 1 tsp. of sunflower oil
  • Salt, freshly ground pepper

Quinoa salad with fruit and cheese

- In a saucepan, cook the quinoa in salted boiling water for about 12 to 15 minutes.

- Stop cooking, cover and let swell for 5 minutes before draining and refrigerating.

- Wash fruits and vegetables. Do not peel them and cut them into thin slices.

- Slice the sucrine.

- Cut the cheese.

- In a salad bowl, arrange the salt, pepper, vinegar and oils.

- Add the cold and drained quinoa, cheese, fruits and vegetables. Mix well and refrigerate for 45 minutes. When ready to serve, adjust the seasoning and garnish with fruits and vegetables.

Quinoa and well-being

A round seed originating from America, quinoa is often called the "rice of the Incas". Belonging to the chenopodiaceae family (that of beetroot and spinach), it is very digestible, gluten-free, rich in minerals (phosphorus, magnesium and iron) and vitamins.

In our diet, it replaces dishes consisting of rice, semolina or pasta.
